1/3 cup garlic-flavored olive oil
seasonal baby greens
1/2 cup good-quality spicy chunky salsa
6 ounces crumbled goat cheese
1/2 cup finely-diced yellow tomatoes
Now pre-heat the grill. Cut in half and pit the Avocados. Mix 1/4 cup of extra virgin olive oil with 2 tablespoons of lemon juice and garlic and then season with salt and pepper. Lightly brush cut sides of the avocados with this flavored olive oil. Grill halves until for about 3-5 minutes until they get lightly marked. Fill the avocado cavity with salsa, and sprinkle with the herbed goat cheese. Add finely-chopped yellow tomatoes.
